Jiang mu ya - ginger duck - is Quanzhou's soul food: a whole duck buried in sliced ginger and sesame oil, slow-braised in a clay pot until the meat slips off the bone. Winter is its season, but it runs all year.
Any busy shop on the old street does it well. Order a half duck, rice, and the ginger - cooked as it is, it eats like candy.
